Champenois d’origine, Alexis de Benoist s’est installé en 2010 en tant qu’artisan vigneron dans la propriété familiale pour réinstaurer la culture de la vigne, interrompue depuis un siècle, et renouer avec son histoire. L’intention est d’harmoniser le cépage et son terroir pour obtenir des vins de ...caractère. Soucieux de préserver l’environnement et la qualité de ses vins, Alexis de Benoist a choisi de centrer ses efforts sur la vigne, en privilégiant une agriculture et un mode cultural traditionnels liés à l’observation.
Dans ce vignoble de 30 à 80 ans d’âge, les vendanges se font à la main. Les raisins sont ainsi récoltés sains, à maturité et restent intacts à l’arrivée au cuvage pour une vinification en grappes entières. Le choix d’une vinification et d’un élevage traditionnels a pour objectif de conserver la fraîcheur du fruit, tout en gardant de la structure, afin d’élaborer un vin de garde expressif, équilibré et délicat.
